Season with salt and pepper and serve. Bake at 4250f for 50 60 minutes covered with foil until potatoes are cooked test with the tip of sharp knife. Then take foil off and bake for 10 20 minutes until golden on top.

Place potatoes in a single layer on a roasting pan or baking sheet. Drizzle olive oil over the top of the potatoes. Bake until tender 45 to 50 minutes.
